What do you think of when you’re met with the term comfort food? Tastes differ, but it’s usually the food that evokes home, either by the taste, texture, looks, or by preparation, serving, sharing, and, most importantly, the feelings that transcend mere gastronomic pleasure such as warmth, pleasure, comfort, and spiritual fulfillment. Something warm, perhaps something you were once spoon-fed, nothing posh, but homemade and of a divine smell that would linger around the house for hours while the dish would simmer on the stove. Can’t hurry love

For starters, the cooking of this dish is not to be done in a fast-forward mode because the beef tail doesn’t tolerate nervous rushing. It will stew for hours until it decides it is done, but all this time, you’ll be able to enjoy the smells that are a pure concentration of happiness. One can’t let the meat out of sight and has to find the right way to sear it, braise until exhaustion, frantically add liquids (but God forbid overdoing it!), season it every now and then with a pinch of this, a dash of that, a handful of something else. It may seem like a never-ending task, but a perfect moment will come. It’s when the meat finally starts separating from the bone at the slightest touch, and at that point, all you’ll be able to say is: It was worth it.

Incomparable

Nothing can match the aroma. If this were perfume, all other scents in gastronomy would be considered eau de toilette. But the taste… It’s the extract of all the best beef has to offer; heavenly tender, yet hellishly mighty. It’s impossible to describe the depth of this taste; it runs all the way to primordial times. The cooking of the tail has to take time because the piece is full of cartilage that gradually melts and makes the meat so juicy and tender. However, for the grand symphony of pleasure, we have to thank the sidekick ingredients too: the vegetables, spices, wine, stock, and many more.
