That is why we decided, in the heart of Split, to present the fascinating flavors and scents of Istria, a peninsula that we could comfortably call a separate continent because its climatic and geographic features, flora and fauna, history and traditions, food and even the music scale, make it a world for itself, a world you will love to discover and explore.
Completely Original and Unique
Since we are not competent to rhapsodize about natural sciences, art history, ethnology, or anthropology, we invoke Istria through its culinary sensations. Istrian cuisine —how typical —is completely original and different from every other, defined by unique ingredients from its ancient forests and a cooking tradition that may have borrowed ideas from other cultures, but only to create something completely original and incredibly tempting. Thus, no wonder about it, the Italian pasta cult certainly spread here, but the pasta here is different, bolder, more powerful, more rustic, and the sauces that go with it are undoubtedly, exclusively and definitely only Istrian because this is the land of asparagus, truffles, and porcini mushrooms; venison and boškarin; fuži and pljukanci; ombolo, sausages, and prosciutto; čripnja, žgvacet, supa, and maneštra; Muscat, Malvasia, and Teran; the land of radical particularities that can already be felt with your eyesight, let alone the senses of taste and smell.
To Istria with Love
Istrian pljukanci with prosciutto is our dedication to the largest Croatian peninsula, the uniqueness that defines it, and the traditions that shape it. Handmade pljukanci (“spitters”) —but in a sanitary way, without spitting, please! —they are soft but substantial, tasty in their own right, yet ideal for coating and soaking in new flavors. And speaking of flavors, Istrian truffles, porcini mushrooms, and prosciutto give this dish a satiating quality filled with sparkling, almost grumpy liveliness and luxurious, hypnotizing scents that simply invoke Istria and emphasize all its peculiarities. Pair this perfection with a glass of heavenly chilled Malvasia or, why not, Momjan Muscat, and Istria is here, at your table, at the heart of the most beautiful city in the world. Bon Appetit!
