Surely, we know how to cook and bake, boil and simmer, fry and grill—and, to be clear, you can convince yourself of all this every day—but there is something in these raw passions that sometimes simply need to be satisfied. And when you have masters in the kitchen, as we do, then “sometimes” can easily become every day. Because why not?

Grandmasters of Raw

Although the thermal processing of foods is our Western standard, good pieces of fish—just like, for example, beef—will give their best, most authentic when we use great knowledge instead of great heat. So, for a tender fillet, some lemon juice will be enough to remove the smell of fresh fish; sardines or anchovies only need immersing in salt in order to release all the pleasures of this world; a larger piece will, by drying, retain all its organoleptic properties and still gain fullness, roundness, and balance of taste; and those special, royal pieces, through the act of drying, will become supernaturally aromatic and incredibly enticing. The combination of techniques and spices, however, creates true gastronomic wonders that also occupy honorary places on our menu.

Raw Passions from Japan to the Mediterranean

As the name suggests, we are a “sushi & oyster bar,” and our sushi master will truly enchant your senses with his raw assets. Nigiri, sashimi, maki, futomaki, uramaki, salmon, tuna, greater amberjack, prawns, and crustaceans of various kinds, listen to your raw passions and choose voraciously because, you know, you will not go wrong. When Japan’s delights meet the Mediterranean’s passions, it is an encounter that is not forgotten and to which one always returns. We did not forget about the “oyster” part either: if you slurp our Gillardeau oyster, you will understand all the languages and dialects of the sea, and your other performances will be up to par as well, if you know what we mean.

But when we stir up raw passions, we take it a step further. Smoked swordfish carpaccio, tuna tartare, ceviche, and risotto ‘al dimi‘ are all unique dishes on our menu, dominated by the primordial taste—no muss, no fuss, as only the most skilled chefs know.
